These bars are great for breakfast on the go or pre-post workout energy boost as they are packed with protein and sweetened only naturally. They are completely gluten free and can be made vegan by substituting the butter for coconut oil.
Servings: 8 pieces
Prep Time: 5 mins
Cook Time: 25 mins
1 cup heaped dates
2/3 cup mixed nuts of your choice
1 cup oats
2 T butter
2 T olive oil
Pre-heat oven to 350 F. Line a 9x5 pan with parchment paper
Warm dates in butter until soft and puffed. Cool for a couple of minutes.
Process the nuts to a coarse chop.
Process the dates to a paste.
Add the oats and nuts to the date paste and knead to make an evenly incorporated mixture.
Press into prepared pan and bake for 20 minutes.
Remove from pan and score into even sized squares.
Set aside to cool completely before breaking into individual pieces.
